When a beer is introduced to a barrel, a number of things can happen. There is always the hope that what is in your head will come through, and the beer will shine after it's time inside the darkest part of the brewery. There is the chance that unexpected things will happen, and you can celebrate the "happy accident." There is the chance that the beer will be completely fucked. Then there is a blend of these things, when the outcome is something you could never have anticipated, and the beer results in something better than you ever could have hoped for. The mystery, the learning process, the unknown, the calculated, and the application of all you've ever known that create the dynamic relationship between your beer and the barrel.
