Last Thursday we picked up 4 barrels from our friends at Infinite Monkey Theorum Winery (two Syrah, one Cab Franc, one Petite Verdot) and took 8 beer barrels worth of Flanders Red to the Super Secret Sour Cellar in order to increase the size and truly kick the sour program in the ass! When you don't have a forklift and can't move large gallonage at a time, you just break it down into smaller, more feasible vessels. We filled the barrels Friday March 8th, 2013 and will have to wait a long time for these to complete secondary fermentation, proper conditioning, blending, and eventually bottling, and will keep you tuned into their progress!
